All grapes are hand-harvested and vinified in the cellars underneath the family home, which is surrounded by the picturesque mountaintops of the Jura. Fermentation occurs in stainless steel cuves but all wines are then racked into a combination of foudres, demi-muids and smaller barrels, virtually none of which are new.
This is a dry sparkling Chardonnay made in the Methode Champenoise. The vineyards are Chardonnay plantings but occasionally Savagnin vines are intermingled. Fermentation in stainless steel and aging in barrel for 2 years before liqueur d'expedition is added for re-fermentation in the bottle to make the bubbles. Indigenous yeasts, whole custer ferment, no fining, and no dosage.
