Grapes are grown in clay soil. With light maceration on the skins at the beginning of fermentation, this wine is vinified in steel vats, and spontaneously refermentated in the bottle with the grape must. Bottled unfined, unfiltered, and with no added sulfur.

Aromas of peach, apricot and quince. Dry and slightly spicy on the palate, with notes of ruby grapefruit. Refreshing acidity and a strong backbone of minerality.
