Organic farming. 100% destemmed. Fermented on skins for 12 days. Aged in neutral oak for 10 months. Native fermentation, no fining, no filtration, no other modifications or additions except 10 ppm of sulfur dioxide in March 2021 and 20 ppm of sulfur dioxide the week before bottling.
Notes of blackcurrant, peppermint, herbs and earthy tobacco.
