Axel Prufer, a German expat who has now settled in the Languedoc, is a key player in the natural wine movement in southern France and is committed to making his wines in a stripped-down, non-interventionist way. By focusing on the best organic viticulture, he's able to harvest pristine fruit that requires no additions on its way into bottle.
Organic/biodynamic farming. This cuveé is made using carbonic maceration for 12 days before being pressed off into fiberglass. Aromas of ripe strawberries, cocoa, and spiced plum. Light on the palate, with plenty of tension, and notes of cherry, strawberry and blood orange. This is a fresh, early-drinking wine that's delicious served lightly chilled.
