They farm organically and biodynamically and practice minimal intervention in the cellar, including indigenous yeasts and no added sulfur. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003e\u003cspan\u003eFrom a parcel of 160+ year-old co-planted pre-phylloxera vines, this is a co-ferment of around 15 different varieties (Carignan, Terrets in various hues, Grenache, Alicante, Cinsault, Aramon, Mourvèdre, and others). Grapes are hand-harvested, whole-bunch macerated and spontanouesly ferment in stainless steel vat prior to pressing and aging for 9 months, also in steel.
