Rebula has been grown in Brda since the 13th century. Translating to “re-boil,” it references the wine’s proclivity to going through the secondary, malolactic fermentation. Organic farming and manual harvesting. This wine was fermented on the skins for 30 days with wild yeast before a year of aging in bottle. All the Kabaj wines are made naturally, in the style and technique of ancient Slovenian winemaking traditions. Wines are made with no use of chemical compounds, native yeasts only, no added sulfur and no filtration.
Honeyed texture with beautiful notes of lemon pith, tangerine skin and passion fruit tea. Despite a month of skin contact, this is not an oxidative orange wine, but rather a white wine with texture and balanced acidity.
