Leaving their former careers in restaurants and pharmaceuticals respectively, Jonas Newman and Vicki Samaras trained in Niagara for four years before planting vines in Prince Edward County in 2003. Today, they produce some of the most sought after wines in Canada. They’ve partnered up with David McMillan of Joe Beef on the project L’Imparfait.

This wine is produced with a 21-day maceration of biodynamically-grown Savagnin, whole cluster, direct press of Chardonnay, and 24-day maceration of Gewürztraminer. Grapes undergo separate spontaneous fermentation in neutral barrels with indigenous yeasts, and the wine is aged 8 months in neutral oak before being bottled unfined and unfiltered, with minimal sulfur.
