Organic farming. The wine fermented for 3 weeks with naturally occurring yeast, and aged in two year old barrels. No additions other than minimal sulfur were used.
The wine demonstrates the savory characteristics of Syrah, with cured black olives and smoked meat on the nose and black pepper on the tongue. Balancing the savory is a dark cherry core that makes up the fruit of the wine. Drinking beautifully now, but can also age gracefully for 6-10 years.
