Organic farming. Grapes were pressed whole-cluster and fermented with naturally occurring yeast in neutral barrels, flextank, and stainless steel. The wine was aged 80% in neutral oak barrels and 20% in stainless steel tank. It went through full malolactic fermentation and was left to age on its lees for 7 months. No additions other than minimal sulfur.
This wine has all the aromatic hallmarks of Albariño, with notes of peaches, apricot, and white flowers. There is breadth and depth on the palate, balanced by a refreshing, crisp acidity that leaves you coming back for more.
