Macerated on the skins and stems for 4 days and then pressed into an old French oak barrel Gideon loaned them, and then aged for 16 months on the lees. Racked for the first time the day before bottling at which point it received the one and only sulfur addition of 25 ppm.
A mid-weight Syrah that displays smoky, meaty qualities, yet still manages to retain a delightful freshness.
