After learning with Olivier Cousin and Eric Dubois, François Saint Lo bought his own place near Saumur and started to make unconventional and very natural wines in huge cathedral-like cellars. These caves are ideal for vinifying because of the natural temperature control and humidity. François works the vineyards with horses. In the cellar he uses old barrels, fiberglass tanks and a hundred year-old press, which was there when he bought the property.
Bois Guyon is made from organically-farmed Cabernet Franc from 80 year old vines on hard, stony soil, almost 100% limestone. Whole bunch maceration for ten days.
Pale in color, with incredible depth of fruit.
