Certified organic. A blend of Dolcetto, with some Barbera and a touch of Nebbiolo for structure. Made from estate fruit grown in the Santa Maria section of La Morra. Varietals are naturally fermented in stainless steel, assembled and matured for 6 months or so in cement (with the Nebbiolo in cask) with spontaneous malolactic fermentation, and then assembled in the late spring after harvest for bottling.
Convento emphasizes purity of fruit over structure, with a lifted mineral streak of clarity. This Dolcetto-dominant wine is light and crunchy with violet/berry fruit, but with good grip and structure.
