Catarratto grapes are de-stemmed and then see a long maceration of 19 days before being pressed into steel tanks to rest on the lees until the spring, when the wine is bottled with very low sulfur. 

This is a highly aromatic, medium bodied orange wine the color of burnished amber. Sea salt-sprinkled apricots with aromas of wild herbs and flowers. Grippy, mouth-coating tannins and an herbaceous quality, along with a creamy richness balanced with tangy citrus and bright acidity on the finish.
