Alice Bouvot is the proprietor of Domaine de l'Octavin, comprised of 5 hectares of vines in the Arbois region of the Jura. Alice started her domaine in 2005 with just 2 hectares and over the years has bought small plots and slowly increased the winery's production. L’Octavin is Demeter biodynamic certified--wild grasses, weeds, insects, and animals all have a place in their vines, creating a true ecosystem that gives a deeper meaning to her wines.
Since 2009 all L’Octavin wines are made with no additives at all. The grapes are destemmed by hand and fermented without the use of sulfur, cultured yeasts, or other additives. Most of the wines are fermented and aged in fiberglass or steel tanks, but only at the ambient temperature of the cave. Most of L’Octavin wines are made to reflect single plot expression.
This wine is a blend of roughly three parts of Pinot Noir and one of Chardonnay, planted next to one another over limestone and marl in Arbois. The two varieties were destemmed and infused together for two months before being pressed and returned to cuve for a year of élevage. A vivid cherry-red in the glass, it is very lightweight on the palate, with notes of red berries, blood orange and minerals.
