Patrick Bouju started Domaine La Bohème in 1998 in the village of Glaine-Montaigut in the Auvergne region. He has several small plots of vines around his village, with some vines aging 120 years. Patrick does everything himself, from working the organic vineyards by horse to bottling, labeling, and bookkeeping.
Made from 100% Gamay planted over volcanic basalt. Fruit is de-stemmed and undergoes a 5-month maceration using spontaneous fermentation in anfora with indigenous yeasts. Aged 12 months in neutral oak, and bottled unfined and unfiltered, with no added sulfur. Salty and smoky, with bright acidity.
