Patrick Bouju started Domaine La Bohème in 1998 in the village of Glaine-Montaigut in the Auvergne region. He has several small plots of vines around his village, with some vines aging 120 years. Patrick does everything himself, from working the organic vineyards by horse to bottling, labeling, and bookkeeping.
This is a rosé pet-nat with aromas of spices. Bright ruby red in the glass, with ripe cranberry, wild raspberry, and mint. There is a faint trace of residual sugar. Spontaneous fermentation in stainless steel with indigenous yeasts. Bottled unfined and unfiltered with no added sulfur.
