Grower Matthieu Goury of Domaine de Chevillard currently farms around 9.5 hectares, about half of which is Mondeuse. He has tiny plots of Pinot Noir and Altesse and a good portion of Jacquère as well. All the farming is organic. His winemaking is generally quite reductive as he uses no sulfur until bottling, and then only around 15ppm total. He does not punch down the reds or use batonnage for the whites and he rarely racks the wines. Reds ferment in concrete after a long maceration and then go to old barrel.
Iron-rich clay/limestone soils. Fruit is destemmed. Long maceration of roughly 3 weeks. Fermentation is via native yeast in concrete. In general the ferments are reductive and gentle – no punchdowns but very light pump overs. Fruit is pressed in an antique Coquillard press, then goes into neutral barrel for malo and aging. No racking. Very low sulfur at bottling.
Pure and precise, with floral aromas, notes of red currants and raspberries and fine acidity.
