Direct-to-press, pressed to tank for a night of settling and racked clean to neutral oak the following morning. Fermentation kicked off spontaneously. The wine completed malolactic fermentation and saw no additives other than sulfur. After twelve months in barrel, the wine was bottled unfined and unfiltered.
This high elevation Vermentino is both stony and salty, with notes of green almond, lime and sea salt. Crisp and fresh yet rich and textural.
