Fruit comes from Paso Robles and Santa Maria Valley. It was picked early in the morning and left the juice on the skins until the afternoon, when it was pressed into stainless steel tank. The wine was fermented until dry, then Chardonnay must was added to sweeten the wine before it was bottled. As it warmed up, fermentation occurred again in bottle, providing the bubbles. The wine was disgorged by hand with no dosage.
Notes of lemon and pineapple on the nose. Crisp green apple, lime zest & lemon on the palate.
