When the winemaker planted this Grillo on a vineyard that sits on a sand dune, right by the Mediterranean Sea, his goal was to “put the sea in a glass.” The grapes are picked around a month earlier than his regular Grillo, to retain freshness, acidity and verve. They spend two days on skins and after fermentation in stainless steel vats, the wine sees a short élevage in concrete. It was bottled unfiltered and with no additions.
Delicate flavors of sea salt and lemon zest. 10.5% alcohol.
