Organic farming. Grapes are hand-harvested and macerated prior to soft pressing. Fermentation in steel tanks with native yeasts. Komokabras is a well-balanced expression of Albariño, falling somewhere between a leaner, no-malolactic style and a fuller, lees-influenced style. This is a blend of two cuvees, both stainless steel, one aged on the lees with malolactic fermentation allowed to complete and another that had its malolactic fermentation blocked. A minerally, crunchy Albariño with floral and citrus aromas, and notes of fresh lemon and sea salt.
