Grape: Chenin Blanc
Pascal Potaire and Moses Gadouche of Les Capriades are known as "Les Rois du Pét-Nat" (the Kings of Pét-Nat) in France. Their expertise on the subject makes them a reference for winemakers worldwide. 95% of their total production is pét-nat. The wines are made with organic grapes from Touraine, with native yeasts, no dosage, or any additives, including sulfur. The soils are silica and clay over limestone, which imparts a tightly-woven minerality to all of their wines.
This is a dry sparkling Chenin Blanc, clean and bright with intense limestone minerality.
