After a career in horticulture and some time working in the restaurant business, Damien Bastian became interested in natural wine. He worked for a well-known Savoie-based winemaker, Dominique Lucas, before settling on 75 ares of chasselas vines in the Marignan appellation (Savoie) less than 1km from Lake Geneva. “Ça Boit Libre” is a play on words; drinking freely (without additives), and Freedom for Savoie (Savoie LIBRE).
Organic/biodynamic farming. Grapes are whole bunch macerated for 5 weeks in a small fiberglass tank, then pressed and directly transferred into small barrels. Bottled the following year without any additives. Unfiltered.
Medium-bodied and fresh, with pure fruit, a slight nuttiness and pleasing saline edge.
