Defaix’s family has been producing wine in and around this region since the 1500s. Defaix works almost exclusively with Chardonnay and his Premier Cru vineyard holdings are farmed entirely by hand and fertilized with natural compost and manure.
Grapes are planted on a steeply sloped hill in the original parcel of “Vaillon,” with a southeast exposure. The soil here is particularly influenced by iron deposits which yields a wine marked by fruit and spice and great density. The Vaillons is influenced by notes of “soubois” and is often the most generous wine of the domaine. This 1er cru spent an astounding 11 years aging on the fine lees before being bottled and then aged an addition couple of years in the cellar.
Aromas of golden apple, tropical yellow fruits, lemon and lime zest and white flowers. Medium-bodied, with plush fruit and a long, dry, and intensely mineral finish.
