This is a white wine made from a vineyard that is over 70 years old, planted on white granite sand soils. Harvesting is carried out manually. Grapes are destemmed without squeezing and then macerated with the skins for 5 days. Then the grapes are pressed and fermented in stainless steel deposits with native yeasts. Once the fermentation has been completed, it is oxidatively aged for 9 months in these same deposits with its fine lees. It is bottled without fining or filtering and without added sulfur.
There's a subtle oxidative quality to the wine, mixed with the characteristic saline quality for which Pansa Blanca is known. Delicate, but complex and layered, with light tannins, and a mineral finish.
