Fruit comes from 35 year-old, organically-farmed Cabernet Franc vines on shale, clay and gravel soils. Three weeks of maceration (de-stemmed), no punching down, with pumping over every 3 days. Aging in barrels for 10 months is followed by a blending of selected barrels in tuns for a second year of aging. Minimal sulfur added at bottling.
Fresh, complex, and earthy, with structured tannins and notes of blackberry, black cherry, and a distinct mineral character.
